I think I am going to make some lemon pepper Mahi Mahi. For a vegetable I am thinking frozen green beans (though I am trying to find something fun to do with them) and some Simply Biscuits.
All of the items I got for $1.00 or less after coupons and sales. So here is how it works out:
Mahi Mahi fillets $1/each $2.00
Frozen green beans $.69
Simply Biscuits $1.49
Organic Salad Mix (Free after coupon)
Total $4.18ish plus tax
So it comes out to about $2.09/each for dinner.
There will be biscuits left over, so I can further lesson our costs by making sausage biscuits and gravy for breakfast tomorrow.
So what are some good recipes that y'all use to stretch out a meal.
